| Mermaid Restaurant
In 1991 Ms.Trinh Diem Vy decided to start up her first restaurant as she had grown up cooking from a very young age and was keen to have her own establishment. Mermaid Restaurant, her first enterprise, was opened to provide basic local dishes to feed the locals on their way to and from the markets, as it is situated near the busy Hoi An cloth market and main food market. Even though a very basic eatery, after a while it attracted westerners and became the first restaurant for foreigners in Hoi An. It gradually became a popular spot with the western tourists and they became her main clientele. Now it is still a simple local eatery, but in such a good spot that she decided to stay there and still has a thriving business feeding many.
Due to the constant questions about ingredients and techniques for making her delicious family recipes, Ms.Vy started classes in 1995 and taught here for five years until she moved classes to her second and much larger restaurant, White Lantern.
The food available here is a mixture of Ms.Vy's family dishes, local family recipes such as Cao Lau and White Rose and other Vietnamese dishes.
